Busy, busy!

My life is still so busy, I'm not sure if I'm coming or going!
But, I did find a few minutes to run into Target and pick up these very cute sandals!
I've got photos from the dance performance and one of these days I'll find the time to sit down and write about it!

My Not So Boring Life

The past two weeks have been super busy. This time of year it's always the same!
Last week I received an email from another homeowner at the lake. The water in the neighborhood pool had turned a really pretty green! Apparently the treasurer just stopped paying the pool company back in February and so they just quit coming to do the weekly cleaning! When I questioned the treasurer she said she didn't get an invoice, that's why she didn't pay. I'm wondering if one month she didn't get her mortgage bill would she just not pay? The pool opens on May 1st, so now we have the pool company scrambling to get it ready for us. Oh, and the treasurer duties are being taken over by someone else on May 1st! Yea!
Daughter had her school dance performance this week. They did a great job, but that kept us busy making sure we had the right shoes, new tights and other things for her costume. And I love when she tells me as she is going out the door that she can't find her white leotard that she needs that afternoon for dress rehearsal! And of course I tear her room apart trying to find it, because I really don't want to have to pay $30 for another one that she will wear one night! I did not find it. Had to run to the local dance/formal shop, which of course never opens on time, and buy a new one.
I am in the middle of coordinating the Teacher Appreciation Lunch for our teachers at the middle school. We are doing it on May 5th, so our theme is Cinco de Mayo! Now, if everyone will just take care of their jobs it will turn out wonderfully.
Tomorrow is daughter's spring performance with the dance school that she dances with afterschool. We have dress rehearsal tomorrow morning, a few hours in between and then the performance at 7:00. I am helping one of the other mom's do a cast party afterwards here at the clubhouse in our neighborhood. I hope I remember to pick up a cake that I ordered. It is the 25th anniversary of the dance school and I am in charge of getting the cake.
My parents are coming in to town for the performance, thankfully they are staying at a hotel! I really don't need their drama here at my house.
BIL is coming for the performance also, but I will believe it when I see it! He will be staying with us, but after his no show last time, I don't know that I will do any special preparations for him!

Mexican Spinach Dip

Went to my first yoga class yesterday. Can I just say I LOVE IT!? I think I will definitely be going back for more.

I made this dip for my neighborhood women's club meeting last night and it was a hit!
Thought I would share it with you. I found it on someone's blog and can't remember who it was! If it was you, let me know!

Mexican Spinach Dip

16 ounces salsa

2 cups shredded colby- jack cheese

1 10 ounce frozen chopped spinach, thawed and drained

8 ounces cream cheese, softened and diced

1 cup evaporated milk

2.25 ounces chopped black olives

1 tablespoon red wine vinegar

Mix and and bake at 400 degrees for 15 minutes. Serve with tortilla chips.

Now that spring break is over and everyone is back at school and gone to work, I have been able to get sooo much accomplished!
Already today:
*trip to post office
*pick up tennis racket that had to be restrung
*publix for ingredients for appetizer for women's club meeting tonight
*laundry
*mop kitchen
*water plants on the deck
*file taxes
*write checks for bills that aren't on auto draft
*catch up on emails
*finalize plans for committee meeting tomorrow
I think I am ready for a break!

I have a birthday coming up next week and I'm already starting to think about what I will get with my "birthday money". Every year my parents and the inlaws send me money to purchase what I would like and these are three of my top choices! I love that they still do this for me even at my age!Unfortunately I won't get enough to buy all three, so I'll have to decide what I just can't live without.

We're on Spring Break!

We are on our first day of spring break! Husband has to work and alarm didn't go off this morning! I just happened to turn over and open my eyes and realized it was too light for it to not even be 6:30. Well, it was 7:00! I jumped up and husband made it out the door and on his way in 15 minutes!

We made our trip to Charlotte on Saturday for the 1st Communion festivities! We were able to spend a little time with my sister and her family at their home on Lake Norman. Enjoyed grilling and eating out on the deck, they don't have quite as much pollen as we do.

We dressed and left for the Easter Vigil Mass, where unbeknownst to me, nephew was also being baptised in addition to making his 1st communion! The service didn't get over until 10:40! Son kept telling me that his grandmother was delirious, she was so tired! I think it was just the fact that she had to sit beside him and he would make a funny remark to her and she would start laughing. We made it back to my sister's at 11:30 and headed to bed.

The next morning we had a leisurely breakfast and when sister and her family got home from church the kids played together for awhile and then it was time for us to head over to SIL's house where that side of the family was gathering for Easter/1st communion/birthday lunch. I still can't believe my husband comes from the same family... they live sooooo differently than we do. Even husband made the same comment after we left. We made it home by 6:00 and the Easter Bunny hurriedly threw some baskets together and left them on the dining room table! Apparently he forgot the big bows on the baskets, but the teens didn't seem to mind!

Since husband is working this week and it ended up being a week for dermatologist appointments and eye appointments along with dance rehearsals, we are just planning to stick around the lowcountry!

Getting Ready for Easter

Even though the teens are 13 and 15, we still do Easter Baskets at our house! I NEVER have a problem finding things to fill daughter's basket, but this year I am having a HARD time finding things for son! I have one more day to get it together and that's it.
