Yummy!

I made this cake for our dessert on Easter. It was really good!
I can't remember where I found the recipe, if anyone knows who I can credit, please let me know!
 
Hummingbird Upside Down Cake
6 Tbsp Melted Butter
11/4 Cup Brown sugar
3/4 Cup Shredded Coconut
1 20 Oz. Can Pineapple Chunks
Two Handfuls Pecans (about20-25 pecans)
8 Tbsp Unsalted Butter (1/2 Cup or 1 Stick)
3/4 Cup White Sugar
2 Eggs
1 tsp Vanilla
1 tsp Almond Extract
1/4 Cup Buttermilk
1 3/4 Cup Flour
1 tsp Baking Powder
1 tsp Cinnamon
1/4 tsp Salt
3-4 Ripe Bananas
Topping:
2 Oz. Room Temperature Cream Cheese
3/4 Cup Heavy Cream
1/2 Cup Brown Sugar
1 tsp Vanilla
3 Tbsp Reserved Pineapple Juice


Mix together the melted butter and 3/4 cups of the brown sugar. Spread it into a 9" round cake pan.
Sprinkle the coconut across the top of the butter mixture.
Drain the can of pineapple, reserving 3 tablespoons of the juice.
Place the pineapple and the pecans across the bottom of the pan and set to the side.
In a mixer, cream together the butter, white sugar and the remaining 1/2 cup of brown sugar.
Add in the eggs and the two extracts.
Mix in the buttermilk.
In a separate bowl combine the flour, baking powder, cinnamon and salt.
Add the dry mixture to the wet in batches, stirring after each addition.
Add in the bananas and mix until combined.
Pour the cake batter over the top of the pecans and place in a 350 degree oven for 55-60 minutes or until a toothpick comes out clean in the middle.
Allow about 5 minutes to cool and then run a knife around the edge and flip over onto a serving dish.
For the whipped cream, begin by whipping the cream cheese in a mixer until smooth.
Add in the cream, brown sugar, vanilla and pineapple juice.
Whip on medium/high speed until whipped cream forms.
Serve a hearty dollop of the whipped cream along side the cake.

The whole family went to see Wicked last night. It was one of those Best of Broadway shows. I had not seen it on Broadway, but this was a fantastic performance! I think even teenage son, who went kicking and screaming, might have liked it too!
Our little kitty is slowly healing, He has two broken ribs and four bites on his lower body. The vet shaved around the wounds so they could make sure he didn't need stitches. I have  an antibiotic ointment that has to be applied twice daily. He also has to take an antibiotic PILL once a day! Luckily husband was able to get it in him without much drama!He is just pitiful but I am hoping for a full recovery! I thought the dogs that did this were from an yucky neighborhood down the road from us, but I noticed some signs in our neighborhood for lost dogs and the description matches that of the dogs that I saw attacking our cat! I called and left a message, let's see if they call back. And, in the message i didn't say what I would have really liked to have said to them!

Not a Good Weekend

My sweet diabetic kitty was attacked by some dogs running loose through our neighborhood early Sunday morning. 
He is ok for now. 
I feel incredibly guilty because I was the one that left him outside, even though I left the garage door open a crack for him to get some shelter. 
Words just can't express....

Yep, another year older!
And it does not bother me one bit!
I am still waiting to start feeling like a grown up.... maybe you never do?!
The photo is of the birthday card I received from my in-laws.... the same one for the past three years! I think that is so funny! I would never say anything to them because I am just so happy they think enough of me to even send me a card and a gift. But it makes me wonder....
Did my MIL grab a big hand full of the same card or does she go out each year, see this one and think "It's Perfect!" Either way I love them to pieces and already went and spent my bday money on a new handbag!
